Ecco Domani 2001 Cabernet Sauvignon
Production Area:
Our fruit is from the Northeastern "Tre Venezie" region of Italy.
With a climate similar to Northern California's ideal grape growing
regions, known for "cool nights and warm days," conditions in the
Tre Venezie are conducive to exceptional grape maturation. The Tre
Venezie is made up of grapes from three premier growing regions:
Trentino Alto Adige, Veneto, and Friuli-Venezia Giulia. Ecco Domani
meticulously combines the inherent strengths of the fruit from each
of these premium regions, to created full-flavored wines with superb
color and wonderful aroma, backed by a fine level of intensity.
- Trentino Alto Adige...gives the wine its wonderful aroma
- Veneto...enhances the body of the wine
- Friuli-Venezia Giulia...draws out the varietal character, adding complexity
Viticultural Notes:
The year 2001 was characterized by notable and hasty changes in temperature, which are considered abnormal for the region. High temperatures affected the maturation period for the grapes, with occasional rainstorms during the months of June and July. In late August, short periods of dryness were evident, which positively affected the maturation of the grapes. During September, the evening temperatures fell to 50°F, which helped promote the building of aromatic substances. For this vintage, the sugar concentration is higher than in the previous years.
Winemaker Notes:
Ecco Domani Cabernet Sauvignon was made from 100% Cabernet Sauvignon
grapes. The grapes were harvested during the full maturation period,
which lasts from the end of September through the first 20 days of
October. The grapes were macerated for 8 to 10 days in small stainless
steel tanks. During this time, alcoholic fermentation took place,
and selected yeasts were added. The wine remained in the tanks until
the end of malo-lactic fermentation. The wine was filtered only prior
to bottling to preserve the deep color and vibrant fresh fruit flavors.
Following Ecco Domani's Winemaking Philosophy of fresh, forward fruit
wines, our Cabernet Sauvignon was not introduced to any oak. This
allows the wine to retain the pure fruit characteristics.
Tasting Notes:
An intense deep ruby color, with spice and ripe berry aromas, Ecco Domani Cabernet Sauvignon offers textured, firm tannins, with a rich finish. The vibrant fruit flavors and excellent acidity of our Cabernet Sauvignon make it an excellent match with a wide range of foods, including hearty tomato-based pasta dishes, grilled meats, and roasted vegetables.
