The Grape
Sangiovese is the main grape component of Chianti, one of Italy's best known wines.
Our Sangiovese grapes originate in the hills between the Provinces of Siena and Florence
within the renowned Chianti area of Tuscany. This area is known for a warm, sunny growing
season, with substantial temperature differential between day and night.
Such conditions produce flavorful, rich grapes.
The cultivation of these grapes can be traced back through the centuries to ancient Greece and Rome.
In fact, the word Sangiovese is derived from Latin “sanguis Jovis,” or the blood of Jupiter.
Viticultural Notes:
The vineyards where our grapes are grown in the Chianti region cover more than 1,200 acres.
The vines are planted in rows that follow the sloping hillsides in a modification of the most
popular Guyot cultivation method which uses a horizontal, spurred trellis system.
Most of the vineyards have southern exposure to the sun, guaranteeing maximum daily sunlight
and favoring full maturation of the grapes. The 2004 harvest was characterized by warm days and
cool nights, allowing the grapes to ripen slowly and completely, producing excellent concentration in the fruit
Winemaker Notes:
The wine was vinified using a maceration time of approximately eight days.
The juice remained in contact with the skins during fermentation,
using the remoutage or pump-over method. The temperature was held between 24°-25° C
during fermentation to encourage good color and tannins, while maintaining the rich fruit
aromas characteristic of the Sangiovese grape. The wine was not oaked, to maintain freshness
and vivacity. The juice remained in temperature controlled tanks until bottling in March 2005.
Tasting Notes:
Our 2004 Chianti is a clear, ruby-red color, with reasonable depth and "legs", indicating good structure.
The mouthfeel is soft and round on the palate. Aromas of cherries and fresh red fruit mingle with spicy,
peppery notes. The fresh, well-structured character of this wine makes it an ideal complement to all types
of pasta, hor d’eouvres, and red or white meats.
