Waiters at Tom Collins’ new pop-up Bistrotheque 88 will be serving up his dishes in serious style. The restaurant, in Canary Wharf (accessible by boat from Westminster Pier in London), enlisted Giles Deacon to create uniforms inspired by the eighties.
