Chef Austin Hu is a cosmopolitan soul with a firmly rooted local philosophy. Born in Wisconsin and raised in various cities around the world (including Shanghai), Austin has since worked with some of the finest chefs in New York City: Gerry Hayden and Claudia Fleming; Tom Colicchio; Michael Anthony; Wayne Nish; and Patrick Connolly. Yet Austin pairs this internationalism with a strong commitment to local ingredients. Austin creates New American cuisine, using locally sourced ingredients (in sync with the seasons) and artisanal and boutique products—"Handmade products with a story," he says.
